Includes proprietary heating system with ceramic-insulated electric heating elements versus typical armored elements, providing exponentially larger heating surface area which eliminates uneven baking and allows for extremely flat temperature profiles and low thermal inertia. A proprietary computer system monitors and regulates heat loss at the front of the oven and differential heat from front to back, automatically adjusting power to individual elements.
