Machine operation:
The basic purpose of this topping unit is to evenly deposit shredded, minced, or chopped food product in a thin layer over a container, pizza, or pie. To accomplish product placement, the product is loaded into a three-sided reservoir. The reservoir, also called the product hopper, is mounted over the top of a powered belt called the hopper belt. The hopper belt carries product towards the product carousel and eventually into a Target Chute.
The product carousel rotates above the product belt to maintain a consistent product height. The carousel has prongs (or product rakes) that extend to within 3/16” of the product belt (the factory setting is usually 5/8”. By rotating against the travel of the product belt, the carousel maintains an even layer of product to be discharged. The hopper belt is driven by a servo-motor, which is controlled by a Programmable Logic Controller (PLC). The PLC is used to keep track on the production conveyor so that the servo-motor will only advance the Product Belt when there is a container is available for being topped. Thus each deposit’s volume is the result of the product height (as maintained by the Carousel) and the length that the Product Belt is fed.
The Topping Unit’s last components help minimize product waste. The pneumatically actuated Product Gate blocks material from being discharged until the PLC has decided that a tray is available for filling; this is called “No Container / No Fill”. The Target Chute may then receive the discharged product so that it can direct the product towards a specific location over the conveyor.
