Rondo - Crustinette Ciabatta Sheet and Cut Line

• Production of ciabatta bread, focaccia, and similar flatbread products.
• Processing of dough sheets for various bakery items requiring precise cutting.
• Large-scale commercial bakeries and food manufacturing facilities.
• Artisan bakeries looking to automate and increase throughput for specific product lines.

Typical throughput

For this class of equipment, throughput can typically range from several hundred kilograms to over a tonne of dough per hour, depending on product size and line speed.

Power supply

Commonly found on units of this type, a 3-phase industrial power supply (e.g., 400V, 50Hz) is typically required.

Footprint

A complete sheet and cut line typically requires a significant operational footprint, often several metres in length, plus space for access and maintenance.

Dough type suitability

Designed for processing high-hydration doughs characteristic of ciabatta and similar products.

Material construction

Typically constructed from food-grade stainless steel for contact parts, ensuring hygiene and durability.

Automation level

Units of this type commonly feature automated sheeting, gauging, and cutting processes, often with PLC control.

• What maintenance is typically required for a used ciabatta sheet and cut line?

Routine maintenance typically involves cleaning, lubrication of moving parts, and inspection of belts, bearings, and cutting tools. Electrical and mechanical checks should be performed periodically.

• Can this line be adapted for other dough types?

• What are the typical safety features on equipment of this nature?

• Is specialist installation required for a used sheet and cut line?

• How are the cutters typically changed or adjusted?

Sheeters and laminators are valued in bakeries for consistent dough thickness and lamination quality. Buyers typically prioritise machines with reliable roller mechanisms and sturdy construction, as these handle repeated daily use well. Used units often represent good value when purchased from reputable sources. Key considerations include motor condition, roller wear, and whether calibration remains accurate. Well-maintained examples deliver dependable performance for croissant, Danish and pastry production. Mechanical simplicity means experienced operators can manage minor maintenance effectively.
